The grapes for this wine are sourced from carefully selected vineyards scattered across the Western Cape of South Africa, most notably from the Breederivier Valley and Stellenbosch, where the warmer growing conditions yield Pinot Gris that is particularly fruity and fresh.
Vinification
Hand-picked during the cool hours of the early morning, the grapes were immediately whole bunch pressed upon arrival to the winery, to preserve delicate, nuanced flavour but no colour from the grey-coloured skin this variety is so well known for. Only the free run juice was used and settled for one day before inoculation with selected yeast strains to enhance the subtle floral aromas of the wine. After fermentation the wine was aged on the primary lees for another 5 months before being racked and prepared for bottling..
