Zalze Sangiovese 2013
80% of the grapes were selected from cooler slopes from False Bay in Stellenbosch and 20% from the coastal region (Paarl). These Stellenbosch vines were planted on duplex soils and shale soils from the Coastal region. This deep well drained soils led to optimum ripe grapes. Small berries were formed with concentrated flavours and good tannin structure. We waited for picking because the Sangiovese varietal had a natural good acidity with soft ripe tannins when hanging longer. Picking took place at sugar levels of
24 - 25ºB, over a two week period, to bring out the spicy character from Stellenbosch and the rich berry fruit from Paarl. Green bunch dropping followed that led to the production of 7 tons/ha.
