The grapes were selected from Cabernet Sauvignon (60%) vineyards from the Stellenbosch region and Shiraz (40%) vineyards from the Stellenbosch, Paarl and Darling regions. The 2015 growing season was very dry but very healthy. The days were moderate with cool evenings. Supplementary irrigation helped the vines to ripen the grapes without any stress. Green harvest was done at 80% veraison to ensure all the fruit that we picked is evenly ripe. Grapes were picked early in the morning to ensure a cool and healthy start to the process.
